The autumn sunshine has been glorious...


Offering a perfect opportunity for foraging during a long walk through the vineyards. It's a treat to see the bright, citric green fronds of fennel shining brilliantly against the clear blue sky.

The tall, magnificent architectural structures rising around the sheephuts are striking, they will make wonderful additions to vases, bringing vibrant shades of green into our homes and adding a touch of natural beauty to our living spaces.

The fennel seeds themselves are intoxicating. A gentle rub releases such aromatic scents

that are both fresh and exotic – it's a wonderfully sensory experience.


Once home, I gently dry the seeds in a warm oven to preserve them for the year ahead. Some of these precious seeds will definitely be added to our olive oil, combined with sun-ripened chilies for a delicious infusion.

It's incredible to think that for centuries such tiny fennel seeds have offered so many gifts from nature, with endless uses in both savory and sweet dishes. From soups and stuffings to teas, cakes, and chutneys, their versatility is truly remarkable.
